Description
A creamy and comforting potato soup infused with smoky jalapeños and sharp cheddar, perfect for chilly evenings and family gatherings.
Ingredients
Scale
- 4 large russet potatoes, diced
- 2 fresh jalapeños, sliced
- 1 cup sharp cheddar cheese, shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1/2 cup heavy cream or half-and-half
- 1 tablespoon butter
- Fresh herbs (cilantro or chives) for garnish
Instructions
- Prepare Your Vegetables: Dice the potatoes and slice the jalapeños, onion, and garlic.
- Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the onion, jalapeños, and garlic; sauté until onions are translucent (about 4-5 minutes).
- Add the Potatoes: Stir in the diced potatoes and let them soak up the flavors for about two minutes.
- Pour in the Broth: Add the broth to cover the potatoes, bring to a gentle boil, then reduce heat and simmer until potatoes are fork-tender (about 15-20 minutes).
- Blend to Creamy Perfection: Use an immersion blender or transfer the soup to a countertop blender to blend until smooth.
- Stir in the Cheddar: Add the shredded cheddar cheese and stir until melted, then add heavy cream to achieve desired consistency.
- Taste and Season: Adjust seasoning with salt, pepper, and additional jalapeños if desired.
- Serve and Garnish: Ladle into bowls and garnish with fresh herbs and a sprinkle of cheddar or smoky paprika.
Notes
For a lighter option, substitute potatoes with cauliflower or use smoked Gouda instead of cheddar.
