S’mores Chocolate Chip Muffins

Description

Delightful muffins blending the classic flavors of s’mores with the comforting texture of a muffin.


Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • ½ cup graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy.
  4. Add in the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract until combined.
  6. Gradually incorporate the dry mixture into the wet mixture, alternating with the milk until just combined.
  7. Gently fold in the chocolate chips and mini marshmallows, being careful not to overmix.
  8. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  9. Bake for 18-20 minutes or until the tops are golden brown and a toothpick comes out clean.
  10. Let them cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra touch of flavor, sprinkle crushed graham crackers and extra chocolate chips on top before baking.
