Description
Delightful cookies inspired by the classic campfire s’mores, topped with gooey marshmallow frosting.
Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 cups all-purpose flour
- 1 cup graham cracker crumbs
- 1 cup semi-sweet chocolate chips
- 1/4 tsp salt
- 1 cup mini marshmallows
- 2 cups powdered sugar
- 2–4 tbsp milk
Instructions
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- In a medium bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and mix until well blended.
- In a separate bowl, whisk together flour, graham cracker crumbs, and salt. Gradually add this to the wet ingredients until just combined.
- Fold in the chocolate chips.
- Scoop dough onto the baking sheets, leaving space for spreading.
- Bake for 10-12 minutes, until lightly golden at the edges.
- Let cool on the sheet for a few minutes, then transfer to a wire rack.
- For the frosting, beat together softened butter, powdered sugar, and milk until fluffy. Fold in mini marshmallows.
- Frost the cooled cookies and optionally top with extra graham cracker crumbs and melted chocolate.
- Serve and enjoy!
Notes
Chilling the dough for 30 minutes can improve texture. Rotate baking sheets halfway through baking for even cooking.
