S’mores Frosted Cookies

Description

Delightful cookies inspired by the classic campfire s’mores, topped with gooey marshmallow frosting.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 cup semi-sweet chocolate chips
  • 1/4 tsp salt
  • 1 cup mini marshmallows
  • 2 cups powdered sugar
  • 24 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. In a medium bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and mix until well blended.
  5. In a separate bowl, whisk together flour, graham cracker crumbs, and salt. Gradually add this to the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Scoop dough onto the baking sheets, leaving space for spreading.
  8. Bake for 10-12 minutes, until lightly golden at the edges.
  9. Let cool on the sheet for a few minutes, then transfer to a wire rack.
  10. For the frosting, beat together softened butter, powdered sugar, and milk until fluffy. Fold in mini marshmallows.
  11. Frost the cooled cookies and optionally top with extra graham cracker crumbs and melted chocolate.
  12. Serve and enjoy!

Notes

Chilling the dough for 30 minutes can improve texture. Rotate baking sheets halfway through baking for even cooking.
