- 4 bone-in, skin-on chicken thighs
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream or sour cream
- 2 tablespoons fresh thyme or rosemary
- Salt, to taste
- Pepper, to taste
- 1 teaspoon paprika
Instructions
- Season the chicken thighs generously with salt, pepper, and a sprinkle of paprika.
- In a large skillet over medium-high heat, melt butter until foamy. Add chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and sear for another 5 minutes. Remove chicken and set aside.
- In the same skillet, add chopped onions and sauté until soft and translucent. Add garlic and cook for another minute.
- Sprinkle flour over onions and garlic, stir to create a roux. Cook for a minute, then gradually pour in chicken broth while whisking to avoid lumps.
- Once gravy thickens, stir in heavy cream or sour cream and fresh herbs. Adjust seasoning to taste.
- Return the chicken to the pan, nestling it into the gravy. Reduce heat to low, cover, and simmer for about 30 minutes.
