  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream or sour cream
  • 2 tablespoons fresh thyme or rosemary
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon paprika

Instructions

  1. Season the chicken thighs generously with salt, pepper, and a sprinkle of paprika.
  2. In a large skillet over medium-high heat, melt butter until foamy. Add chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and sear for another 5 minutes. Remove chicken and set aside.
  3. In the same skillet, add chopped onions and sauté until soft and translucent. Add garlic and cook for another minute.
  4. Sprinkle flour over onions and garlic, stir to create a roux. Cook for a minute, then gradually pour in chicken broth while whisking to avoid lumps.
  5. Once gravy thickens, stir in heavy cream or sour cream and fresh herbs. Adjust seasoning to taste.
  6. Return the chicken to the pan, nestling it into the gravy. Reduce heat to low, cover, and simmer for about 30 minutes.
