Instructions
- Prep the Ingredients: Wash and pat the chicken thighs dry, seasoning both sides with salt and pepper.
- Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Cook the chicken thighs skin-side down for 7-8 minutes until golden brown, then flip and cook for another 5-7 minutes. Remove and set aside.
- Cook the Aromatics: In the same skillet, add another tablespoon of butter if needed. Add sliced onions and cook until translucent. Add minced garlic and cook until fragrant. Then add mushrooms and sauté until browned.
- Making the Gravy: Pour in the chicken broth, scraping any bits from the bottom. Bring to a simmer, return the chicken to the pan, cover, and cook for 30 minutes.
- Add Cream and Seasonings: Stir in the heavy cream and herbs. Let simmer uncovered for a few minutes to thicken.
- Final Touches: Taste and adjust seasoning. For a thicker gravy, mix a tablespoon of cornstarch with water and add while cooking.
- Serve and Enjoy: Serve over rice, mashed potatoes, or cauliflower mash.
