- 2 cups Gluten-Free All-Purpose Flour
- 1 cup Almond Flour
- 1/2 cup Tapioca Flour
- 2 teaspoons Yeast
- 1 cup Warm Water (100-110°F)
- 2 tablespoons Olive Oil
- 1 tablespoon Honey or Sugar
- 1 teaspoon Salt
Instructions
- Proof the yeast by mixing the warm water with the yeast and honey in a small bowl. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the gluten-free all-purpose flour, almond flour, tapioca flour, and salt.
- Create a well in the center of the dry ingredients and pour in the yeast mixture along with olive oil. Mix until a soft dough forms.
- Knead the dough slightly using your hands or a stand mixer fitted with a dough hook for 3-5 minutes; it should be tacky but not sticky.
- Cover the bowl with a clean kitchen towel and let the dough rise in a warm spot for about 1 hour, or until doubled in size.
- Punch down the risen dough, divide it into 12 equal pieces, and shape them into balls. Place on a parchment-lined baking sheet.
- Cover the shaped rolls with a towel and let them rise for another 30-45 minutes until puffy.
- Preheat your oven to 375°F (190°C).
- Brush the tops of the rolls with olive oil and bake for 20-25 minutes until golden brown and hollow-sounding when tapped on the bottom.
- Let cool on a wire rack for at least 10 minutes before serving.
Notes
For a lighter version, coconut flour can be used instead of almond flour, and sunflower seed flour is a suitable replacement for those avoiding nuts.
