- 1 cup ricotta cheese
- 1/2 cup almond flour
- 1/2 cup powdered sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- A pinch of salt

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ricotta cheese, almond flour, and powdered sugar. Mix until smooth.
- Add eggs, vanilla extract, and salt. Stir until well combined.
- Gently fold in baking powder.
- Using a spoon or small ice cream scoop, portion out the mixture onto the lined baking sheet, leaving space between each.
- Bake for 12-15 minutes or until lightly golden on the edges.
- Allow to cool on a wire rack before dusting with powdered sugar and adding toppings.
