Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ricotta cheese, almond flour, and powdered sugar. Mix until smooth.
  3. Add eggs, vanilla extract, and salt. Stir until well combined.
  4. Gently fold in baking powder.
  5. Using a spoon or small ice cream scoop, portion out the mixture onto the lined baking sheet, leaving space between each.
  6. Bake for 12-15 minutes or until lightly golden on the edges.
  7. Allow to cool on a wire rack before dusting with powdered sugar and adding toppings.
