Ingredients

  • 1 cup Sourdough Discard
  • 1 1/2 cups All-Purpose Flour (whole wheat optional)
  • 3/4 cup Brown Sugar (coconut sugar optional)
  • 2 tsp Cinnamon (freshly ground recommended)
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Melted Butter (or vegetable oil)
  • 2 Eggs (or flax eggs)
  • 1/2 cup Milk (dairy or non-dairy)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the sourdough discard, melted butter, eggs, and milk in a bowl until smooth.
  3. Combine the flour, brown sugar, cinnamon, baking powder, and salt in another bowl.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  7. Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For added flavor, consider adding nuts, raisins, or vanilla extract. Measure flour accurately to prevent a dry loaf.
