- 200g Spanish chorizo, sliced
- 400g canned chickpeas, drained
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 400g crushed tomatoes
- 1 tsp sweet paprika
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 500ml vegetable or chicken broth
- Fresh parsley or cilantro, chopped
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- In a large pot over medium heat, drizzle some olive oil and add chopped onions. Sauté until translucent, then add minced garlic until fragrant.
- Add sliced chorizo to the pot and cook until browned.
- Toss in chopped bell peppers and cook until softened.
- Sprinkle paprika and cumin into the pot, stirring well to blend the spices with the vegetables and meat.
- Pour in chickpeas and crushed tomatoes, deglazing the pot with their juices.
- Add enough broth to cover the mixture and bring it to a boil. Reduce to a simmer and let cook for about 30 minutes.
- Just before serving, stir in fresh parsley or cilantro.
- Taste and adjust with salt and pepper as needed.
Notes
For a vegetarian version, swap chorizo for mushrooms. This stew freezes well for up to 3 months.
