Spanish Chickpea and Chorizo Stew

Description

A comforting and hearty stew that combines spiced chorizo, creamy chickpeas, and a medley of vegetables, perfect for cozy gatherings.


Ingredients

  • 200g Spanish chorizo, sliced
  • 400g canned chickpeas, drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 400g crushed tomatoes
  • 1 tsp sweet paprika
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 500ml vegetable or chicken broth
  • Fresh parsley or cilantro, chopped
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. In a large pot over medium heat, drizzle some olive oil and add chopped onions. Sauté until translucent, then add minced garlic until fragrant.
  2. Add sliced chorizo to the pot and cook until browned.
  3. Toss in chopped bell peppers and cook until softened.
  4. Sprinkle paprika and cumin into the pot, stirring well to blend the spices with the vegetables and meat.
  5. Pour in chickpeas and crushed tomatoes, deglazing the pot with their juices.
  6. Add enough broth to cover the mixture and bring it to a boil. Reduce to a simmer and let cook for about 30 minutes.
  7. Just before serving, stir in fresh parsley or cilantro.
  8. Taste and adjust with salt and pepper as needed.

Notes

For a vegetarian version, swap chorizo for mushrooms. This stew freezes well for up to 3 months.
