- 200g Spanish chorizo, diced
- 4 medium potatoes, diced (Russets or Yukon Golds)
- 1 large sweet onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tablespoons fresh thyme or parsley, chopped
- 1 bay leaf
- 1 cup cream or milk (optional)
- 1 tablespoon olive oil
Instructions
- Prepare the Ingredients: Dice chorizo, onions, and potatoes. Mince garlic and chop fresh herbs if using.
- Sauté the Chorizo: In a large pot, heat olive oil over medium heat. Add chorizo and sauté until browned and crispy, about 5-7 minutes.
- Cook the Aromatics: Add diced onions and garlic. Cook until onions are soft, about 4-5 minutes.
- Add Potatoes and Broth: Stir in potatoes and broth, bring to boil, then reduce to simmer. Add fresh herbs and bay leaf.
- Simmer Away: Let soup simmer for 20-30 minutes until potatoes are tender. Taste and adjust seasoning as needed.
- Blend for Creaminess (optional): Use an immersion blender to puree some of the soup for a creamier texture.
- Finish with Cream and Herbs: Stir in cream if using and garnish with fresh herbs before serving.
- Serve and Garnish: Ladle soup into bowls and garnish with herbs or a drizzle of olive oil. Serve with crusty bread.
Notes
For a lighter version, substitute some potatoes with cauliflower. Don’t forget to taste as you go!
