Scale
- 1 lb shrimp, cleaned
- 1 lb mussels, cleaned
- 1 lb clams, cleaned
- 1 lb firm white fish (like cod or haddock), cut into chunks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups ripe tomatoes, diced
- 1 pinch saffron (or turmeric)
- 1 cup dry white wine
- 1 teaspoon smoked paprika
- Salt, to taste
- Fresh parsley or thyme, for garnish
- Lemon wedges, for serving
Instructions
- Gather and prep your ingredients: Clean the seafood and soak mussels and clams in water. Chop garlic and dice tomatoes.
- Sauté the base: Heat olive oil over medium heat in a skillet. Add minced garlic and sauté until fragrant.
- Add tomatoes and spices: Stir in the diced tomatoes, salt, paprika, and saffron. Let it simmer for 5-10 minutes.
- Pour in the wine: Add white wine to the pan and let it cook down for 5 minutes.
- Introduce the seafood: Fold in the seafood gently, cover, and cook for 7-10 minutes until mussels open and shrimp turn pink.
- Finish with fresh herbs: Sprinkle with chopped parsley or thyme before serving.
- Serve: Enjoy hot with crusty bread and lemon wedges.
Notes
Avoid overcooking the seafood to prevent it from becoming rubbery. Fresh herbs are essential for flavor!
