- 1 cup almond flour
- 1 cup gluten-free oats
- 2 eggs
- 1/2 cup maple syrup
- 1 tsp cinnamon

- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper and lightly grease it.
- In a medium bowl, whisk together almond flour, oats, spices, baking soda, baking powder, and salt.
- In a large bowl, combine pumpkin puree, eggs, and maple syrup, beating until smooth.
- Gradually fold the dry ingredients into the wet ingredients without overmixing.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for 10 minutes before transferring to a wire rack.
- Once cooled, slice into squares and serve with whipped cream or powdered sugar if desired.
Notes
For a vegan version, substitute eggs with flax eggs or applesauce. You can also use coconut flour instead of almond flour, adjusting the liquid as needed.
