  • 1 lb spicy sausage (Andouille or smoked)
  • 2 large Russet potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Brown the sausage in a large pot over medium heat for 5–7 minutes.
  2. Add the onion, garlic, and bell pepper; cook until the onion is translucent.
  3. Stir in the diced potatoes and Cajun seasoning.
  4. Pour in the broth and bring to a gentle boil. Simmer until the potatoes are tender, about 15-20 minutes.
  5. Stir in the cream and simmer for an additional 5 minutes.
  6. Taste and adjust seasoning as necessary.
