- 1 lb spicy sausage (Andouille or smoked)
- 2 large Russet potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tsp Cajun seasoning
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Brown the sausage in a large pot over medium heat for 5–7 minutes.
- Add the onion, garlic, and bell pepper; cook until the onion is translucent.
- Stir in the diced potatoes and Cajun seasoning.
- Pour in the broth and bring to a gentle boil. Simmer until the potatoes are tender, about 15-20 minutes.
- Stir in the cream and simmer for an additional 5 minutes.
- Taste and adjust seasoning as necessary.
- Ladle into bowls and serve warm.
Notes
Feel free to add other vegetables like corn or carrots. For a lighter option, use turkey sausage or omit the sausage altogether.
