  • ½ cup honey
  • 23 cloves garlic, smashed

Instructions

  1. Wash your carrots thoroughly. Peel them if they have tough skins, otherwise scrub well.
  2. Mix 1 cup of apple cider vinegar, 1 cup of water, and ½ cup of honey in a small saucepan. Add smashed garlic and salt.
  3. Bring this mix to a gentle boil, stirring occasionally to dissolve the honey.
  4. Remove from heat and let cool slightly. Stir in red pepper flakes or sliced fresh chilies and any desired herbs.
  5. Pack the carrot sticks vertically into sterilized jars and pour the brine over them, ensuring they are submerged.
