Ingredients

- 1 lb baby carrots (or sliced regular carrots)
- 1/2 cup raw honey
- 1 cup apple cider vinegar
- 1 cup water
- 1 tsp sea salt
- 1 tsp red chili flakes (adjust to taste)
Instructions
- Prepare the carrots by slicing them into thin sticks or rounds.
- In a medium saucepan, combine equal parts apple cider vinegar and water (1 cup each) over medium heat.
- Stir in the honey and salt, and bring the mixture to a simmer until honey dissolves.
- Add red chili flakes and simmer for a couple of minutes.
- Place prepared carrots in a clean jar and pour the hot mixture over them, ensuring they’re submerged.
- Let cool to room temperature and then refrigerate for at least 24 hours before enjoying.
- These pickled carrots will stay fresh for up to 2 weeks in the fridge.
Notes
Use fresh, crunchy carrots for the best texture. You can customize with garlic or herbs for added flavor.
