Ingredients

  • 1 lb baby carrots (or sliced regular carrots)
  • 1/2 cup raw honey
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1 tsp sea salt
  • 1 tsp red chili flakes (adjust to taste)

Instructions

  1. Prepare the carrots by slicing them into thin sticks or rounds.
  2. In a medium saucepan, combine equal parts apple cider vinegar and water (1 cup each) over medium heat.
  3. Stir in the honey and salt, and bring the mixture to a simmer until honey dissolves.
  4. Add red chili flakes and simmer for a couple of minutes.
  5. Place prepared carrots in a clean jar and pour the hot mixture over them, ensuring they’re submerged.
  6. Let cool to room temperature and then refrigerate for at least 24 hours before enjoying.
  7. These pickled carrots will stay fresh for up to 2 weeks in the fridge.

Notes

Use fresh, crunchy carrots for the best texture. You can customize with garlic or herbs for added flavor.
