Instructions
- Gather your ingredients to make cooking feel more organized.
- Heat a nonstick skillet over medium heat and add olive oil or butter. Sauté the spinach until just wilted, about 1-2 minutes.
- Whisk the eggs in a bowl, seasoning with salt, pepper, and fresh herbs if desired.
- Pour the whisked eggs over the sautéed spinach in the skillet. Lift the edges gently to allow uncooked egg to flow to the edges.
- Add crumbled feta cheese on top as the omelet sets.
- Cook until edges are golden and the center is slightly soft, folding the omelet in half to finish cooking.
- Slide onto a plate, garnish with herbs, and serve warm.
Notes
Feel free to substitute kale for spinach and goat cheese for feta if desired. Avoid overcrowding the pan for a perfect omelet.
