Description

A creamy and savory omelet filled with sautéed spinach and crumbled feta cheese, perfect for any meal of the day.

Ingredients

Scale
  • 23 large eggs
  • 2 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs (optional, like dill or parsley)

Instructions

  1. Gather your ingredients to make cooking feel more organized.
  2. Heat a nonstick skillet over medium heat and add olive oil or butter. Sauté the spinach until just wilted, about 1-2 minutes.
  3. Whisk the eggs in a bowl, seasoning with salt, pepper, and fresh herbs if desired.
  4. Pour the whisked eggs over the sautéed spinach in the skillet. Lift the edges gently to allow uncooked egg to flow to the edges.
  5. Add crumbled feta cheese on top as the omelet sets.
  6. Cook until edges are golden and the center is slightly soft, folding the omelet in half to finish cooking.
  7. Slide onto a plate, garnish with herbs, and serve warm.

Notes

Feel free to substitute kale for spinach and goat cheese for feta if desired. Avoid overcrowding the pan for a perfect omelet.
