Ingredients

  • 1 pre-made pizza dough or homemade dough
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional fresh herbs (basil or oregano)
  • Optional toppings (olives, artichokes, mozzarella)

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Roll out your pizza dough on a floured surface to the desired thickness and transfer it to a baking sheet or pizza stone.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Toss in the fresh spinach and cook until wilted. Season lightly with salt and pepper, then remove from heat.
  4. Brush the rolled-out dough with the remaining olive oil. Evenly distribute the sautéed spinach and garlic mixture on top, and crumble feta cheese generously across the spinach, adding any additional toppings.
  5. Slide the pizza into the preheated oven and bake for 12-15 minutes or until the crust is golden and crispy.
  6. Allow the pizza to cool slightly, drizzle with more olive oil, and scatter with fresh herbs before slicing and serving warm.

Notes

For a gluten-free option, consider using cauliflower crust. Fresh herbs enhance the flavor best, but dried herbs will also work.
