Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket.
  3. Heat olive oil in a skillet over medium heat and sauté onions and garlic until translucent.
  4. Add the spinach and cook until wilted, then stir in the cranberries and cream cheese, mixing until well combined.
  5. Stuff each chicken breast with the filling and secure with toothpicks if necessary.
