  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp espresso powder (optional)
  • 8 oz cream cheese (for frosting)
  • 1/2 cup butter (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together the cake flour, cocoa powder, baking soda, and baking powder.
  3. In another bowl, combine buttermilk, oil, eggs, and vanilla extract. Mix until smooth and gradually add to the dry ingredients.
  4. Fold in espresso powder if using.
  5. Pour the batter evenly into prepared pans and bake for 25-30 minutes.
  6. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For frosting, whip together cream cheese and butter until creamy, then add powdered sugar and vanilla.
  8. Spread frosting between cake layers and on top. Decorate as desired.
