Description

Ingredients

  • 1 lb Ribeye or flank steak
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 4 flour tortillas
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • 2 cloves garlic, minced

Instructions

  1. Marinate the steak: Combine lime juice, minced garlic, cumin, chili powder, and olive oil. Add salt and pepper to taste. Let the steak marinate for at least 30 minutes.
  2. Cook the steak: In a hot skillet, cook the steak for about 4-5 minutes per side for medium-rare. Let it rest for 5-10 minutes, then slice thinly against the grain.
  3. Sauté the vegetables: In the same skillet, add more oil if needed, and sauté the sliced onions and bell peppers on medium heat for about 8-10 minutes until tender and caramelized.
  4. Assemble the quesadillas: Lay a tortilla in the skillet, add cheese over one half, then layer with steak and sautéed veggies, adding more cheese before folding the tortilla over.
  5. Cook until crispy: Cook the quesadilla on one side until golden and the cheese melts, about 2-3 minutes, then flip and cook the other side for another 2-3 minutes.
  6. Slice and serve: Cut into wedges and serve hot with salsa, sour cream, or guacamole.
