- 1 teaspoon baking soda
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 cup all-purpose flour
- 1/2 cup heavy cream
Instructions
- Soak dates in boiling water combined with baking soda for 10-15 minutes.
- Cream together butter and brown sugar until fluffy.
- Beat in eggs one by one, ensuring full incorporation each time.
- Sift in the flour and fold in the soaked date mixture; do not overmix.
- Pour the batter into a greased baking dish and bake at 350°F for 30-35 minutes or until a toothpick comes out clean.
- For the toffee sauce, melt butter in a saucepan, stir in brown sugar and heavy cream, and let bubble until smooth.
- Serve warm pudding drizzled with toffee sauce.
