Description

A delightful blend of creamy cheesecake and wholesome oats, topped with juicy strawberries.


Ingredients

  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups whole or almond milk
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish.
  3. In a large bowl, mix rolled oats, baking powder, and salt.
  4. In another bowl, whisk together milk, eggs, maple syrup or honey, and vanilla; fold into the oat mixture.
  5. Beat cream cheese until smooth; layer half of the oat mixture in the baking dish, topped with half of the cream cheese mixture and half of the strawberries. Repeat.
  6. Bake for 30 to 35 minutes until golden and set.
  7. Cool for a few minutes before serving.

Notes

For a twist, use Greek yogurt instead of cream cheese and feel free to add spices like cinnamon or nutmeg.
