A delightful blend of creamy cheesecake and wholesome oats, topped with juicy strawberries.
Ingredients

- 2 cups rolled oats
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups whole or almond milk
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 2 cups fresh strawberries, sliced
Instructions
- Preheat the oven to 350°F (175°C).
- Grease an 8×8-inch baking dish.
- In a large bowl, mix rolled oats, baking powder, and salt.
- In another bowl, whisk together milk, eggs, maple syrup or honey, and vanilla; fold into the oat mixture.
- Beat cream cheese until smooth; layer half of the oat mixture in the baking dish, topped with half of the cream cheese mixture and half of the strawberries. Repeat.
- Bake for 30 to 35 minutes until golden and set.
- Cool for a few minutes before serving.
Notes
For a twist, use Greek yogurt instead of cream cheese and feel free to add spices like cinnamon or nutmeg.
