Delightful cookies combining the creamy essence of cheesecake with the burst of fresh strawberries.


Ingredients

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and cream cheese together until smooth and fluffy (about 2-3 minutes).
  3. Gradually add the granulated and brown sugars, beating well until incorporated. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  5. Gently fold in the chopped fresh strawberries into the dough.
  6. Drop balls of dough onto the baking sheet, spacing a couple of inches apart. Bake for about 12-15 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Enjoy warm or at room temperature.

Notes

For an extra touch, sprinkle the cookies with powdered sugar before serving.
