- 1 cup unsalted butter, cold
- 1/4 cup cold water
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar (for filling)
- 1 tsp vanilla extract
- 1 cup fresh strawberries, chopped
- 1 beaten egg (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Prepare the Dough: In a mixing bowl, combine flour and sugar. Cut cold butter into cubes and mix it into the flour until it resembles coarse crumbs. Add cold water gradually until the dough just comes together. Divide into two discs, wrap in plastic wrap, and chill for at least 30 minutes.
- Make the Filling: In a separate bowl, blend softened cream cheese, sugar, and vanilla extract until smooth. Gently stir in chopped strawberries, being careful not to mash them.
- Roll Out the Dough: Take one disc of the chilled dough and roll it out on a lightly floured surface until about 1/8 inch thick. Using a round cutter, cut out circles.
- Assemble the Pastries: Spoon a tablespoon of the filling onto the center of each dough circle. Fold the circle over to create a half-moon shape. Press the edges together to seal, and use a fork to crimp them for a decorative touch.
- Bake: Preheat your oven to 375°F (190°C). Place the pastries on a lined baking sheet, brush the tops with egg wash for a golden finish, and bake for 20-25 minutes until they’re puffed and golden brown.
- Cool and Serve: Allow them to cool slightly before dusting with powdered sugar. Serve warm, and enjoy!
Notes
For lighter filling, substitute cream cheese with Greek yogurt. Frozen unbaked pastries can last about three months.
