- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/3 cup melted butter
- 1/2 cup milk (whole, almond, or oat)
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and chopped
- 4 ounces cream cheese, softened
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a muffin tin by lining it with paper liners or greasing it with non-stick spray.
- In a mixing bowl, combine the dry ingredients: sift all-purpose flour, baking powder, baking soda, and sugar.
- In a separate bowl, mix the wet ingredients: whisk together egg, melted butter, milk, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients.
- Prepare the strawberries and gently fold them into the batter along with dollops of softened cream cheese.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack.
Notes
Avoid overmixing to keep muffins tender. Using room temperature ingredients helps with rising.
