Ingredients

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup melted butter
  • 1/2 cup milk (whole, almond, or oat)
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and chopped
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by lining it with paper liners or greasing it with non-stick spray.
  3. In a mixing bowl, combine the dry ingredients: sift all-purpose flour, baking powder, baking soda, and sugar.
  4. In a separate bowl, mix the wet ingredients: whisk together egg, melted butter, milk, and vanilla extract.
  5. Gently fold the wet ingredients into the dry ingredients.
  6. Prepare the strawberries and gently fold them into the batter along with dollops of softened cream cheese.
  7. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes in the pan before transferring to a wire rack.

Notes
