Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1 cup water
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • Fresh strawberries, ripe and juicy
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan over medium heat, melt the butter in water. Once melted and boiling, remove from heat.
  3. Gradually stir in the flour until a cohesive dough forms, then return to low heat for a minute.
  4. Remove from heat and let cool. Add eggs one at a time, mixing well until smooth.
  5. Transfer dough to a piping bag and pipe small mounds onto a parchment-lined baking sheet.
  6. Bake for 25-30 minutes until golden brown and firm to the touch.
  7. While cooling, whip the heavy cream with sugar and vanilla until soft peaks form.
  8. Slice cooled puffs in half, fill with whipped cream and strawberries, and dust with powdered sugar if desired.

Notes

For a tangier twist, substitute whipped mascarpone for the cream. Frozen strawberries can be used in a pinch, though fresh is preferred.
