Delicious Strawberry Crumb Bars featuring a crumbly and buttery crust layered with fresh strawberries.

- 1 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1 cup rolled oats
- 4 cups fresh strawberries, sliced
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch square baking pan lined with parchment paper.
- In a mixing bowl, combine melted butter, granulated sugar, brown sugar, and vanilla extract until smooth. Then, add flour, oats, and salt, mixing until combined.
- Press about two-thirds of the mixture into the bottom of the prepared pan.
- In another bowl, mix sliced strawberries with sugar, lemon juice, and baking powder. Let rest for about 10 minutes.
- Spoon the strawberry mixture over the crust and sprinkle the reserved crumb mixture on top.
- Bake for 30-35 minutes or until the topping is golden brown. Allow to cool for 10 minutes in the pan before lifting out and cooling completely on a wire rack.
- Once cooled, slice into squares and serve. Dust with powdered sugar if desired.
Notes
Let the bars cool completely before slicing for clean cuts. They can be made ahead of time and stored in the refrigerator for enhanced flavor.
