Description

A delightful cheesecake combining the sweetness of strawberries with the earthy notes of matcha, perfect for gatherings and celebrations.


Ingredients

  • 1 and ½ cups of crushed graham crackers
  • ½ cup of melted butter
  • ¼ cup of sugar
  • 16 ounces of softened cream cheese
  • ¾ cup of sugar
  • 2 teaspoons of vanilla extract
  • 1 cup of heavy cream
  • 1 tablespoon of matcha powder
  • 1 tablespoon of hot water
  • 1 cup of fresh strawberries, roughly chopped (plus extra for garnish)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed graham crackers, melted butter, and sugar until well incorporated. Press evenly into the bottom of a 9-inch springform pan and bake for about 10 minutes. Remove and let cool.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fully combined. Add vanilla extract and blend. Pour in heavy cream and mix until slightly thickened.
  4. In a separate bowl, whisk matcha powder with hot water to form a smooth paste, then fold this into the cheesecake base gently.
  5. Roughly chop fresh strawberries and fold them into the cheesecake mixture, saving a few slices for garnishing.
  6. Pour the cheesecake filling over the cooled crust and smooth the top. Bake in the oven for 50-60 minutes until the edges are set but the center has a slight jiggle.
  7. Turn off the oven and leave the cheesecake inside for an additional hour to prevent cracking. Remove and let cool before refrigerating for at least 4 hours or overnight.
  8. Decorate with additional strawberries and a dusting of matcha before slicing and serving.

Notes

Ensure the cream cheese is at room temperature for better blending. Chill the cheesecake properly for best texture.
