Ingredients

  • 1/2 cup feta or goat cheese, crumbled
  • 3 tablespoons olive oil

  • 1 tablespoon honey
  • Juice of 1/2 lemon

Instructions

  1. Wash and dry the greens thoroughly. Slice the strawberries, dice the cucumbers, and gather the pomegranate seeds. If using, lightly toast the nuts in a skillet.
  2. Whisk together the olive oil, balsamic vinegar, honey, and lemon juice in a small bowl. Adjust sweet/tangy to taste.
  3. Combine the greens, strawberries, cucumbers, and pomegranate seeds in a large bowl. Toss gently to mix without bruising the strawberries.
  4. Top the salad with nuts and cheese for added texture.
  5. Drizzle the dressing over the salad just before serving and toss lightly to coat everything evenly. Serve immediately.
