- 2 cups ripe strawberries, halved or quartered
- 1 cup pomegranate seeds
- 1 cup cucumber, diced
- 1/4 cup fresh mint or basil, chopped
- 1/4 cup chopped walnuts or almonds
- 1/2 cup feta or goat cheese, crumbled
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- Juice of 1/2 lemon
Instructions
- Wash and dry the greens thoroughly. Slice the strawberries, dice the cucumbers, and gather the pomegranate seeds. If using, lightly toast the nuts in a skillet.
- Whisk together the olive oil, balsamic vinegar, honey, and lemon juice in a small bowl. Adjust sweet/tangy to taste.
- Combine the greens, strawberries, cucumbers, and pomegranate seeds in a large bowl. Toss gently to mix without bruising the strawberries.
- Top the salad with nuts and cheese for added texture.
- Drizzle the dressing over the salad just before serving and toss lightly to coat everything evenly. Serve immediately.
Notes
Use ripe, in-season strawberries for the best flavor. Keep the dressing separate until just before serving to maintain freshness.
