Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add in eggs and vanilla extract, mixing gently until combined.
- Gradually sift in all-purpose flour and mix until just incorporated.
- Fold in chopped fresh strawberries.
- Roll dough into balls (about a tablespoon each) and place on prepared baking sheets.
- Bake for 12-15 minutes, until edges turn golden, but centers remain soft.
- Cool cookies, then mix cream cheese and powdered sugar to drizzle over cookies.
- Sprinkle with colorful sprinkles while icing is still wet.
