Ingredients

  • 1/2 cup heavy cream
  • 1 cup shortcake crumbs
  • 2 tbsp butter, melted

Instructions

  1. Prepare the Strawberries: Wash and hull the strawberries. Chop them finely, then cook in a saucepan over low heat with a splash of water and pinch of sugar until they soften. Let cool.
  2. Make the White Chocolate Ganache: In a heatproof bowl, combine white chocolate and heavy cream. Heat gently until melted and smooth.
  3. Combine Everything: Fold the cooled strawberry mixture into the ganache. Stir in melted butter until well mixed.
  4. Chill the Mixture: Let cool to room temperature, then refrigerate for at least 2 hours.
  5. Shaping the Truffles: Scoop out portions and roll into small balls.
  6. Coat with Shortcake Crumbs: Roll each truffle in shortcake crumbs until coated.
  7. Chill Again: Place on a lined baking sheet and refrigerate for another 30 minutes.
