- 2 cups fresh strawberries, hulled and finely chopped
- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
- 1 cup shortcake crumbs
- 2 tbsp butter, melted
Instructions
- Prepare the Strawberries: Wash and hull the strawberries. Chop them finely, then cook in a saucepan over low heat with a splash of water and pinch of sugar until they soften. Let cool.
- Make the White Chocolate Ganache: In a heatproof bowl, combine white chocolate and heavy cream. Heat gently until melted and smooth.
- Combine Everything: Fold the cooled strawberry mixture into the ganache. Stir in melted butter until well mixed.
- Chill the Mixture: Let cool to room temperature, then refrigerate for at least 2 hours.
- Shaping the Truffles: Scoop out portions and roll into small balls.
- Coat with Shortcake Crumbs: Roll each truffle in shortcake crumbs until coated.
- Chill Again: Place on a lined baking sheet and refrigerate for another 30 minutes.
- Serve and Enjoy: Serve on a platter for sharing.
