- 4 Boneless Chicken Breasts
- 8 oz Cream Cheese
- 2 cloves Fresh Garlic, minced
- 1 cup Mushrooms, chopped
- 2 tbsp Fresh Parsley, chopped
- Salt and Pepper to taste
- 1 tsp Olive Oil (for sautéing)
- 1 tbsp Olive Oil (for searing)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and chopped mushrooms, sauté for 5-7 minutes until golden brown.
- Stir in the cream cheese and herbs, mix well, and season with salt and pepper.
- Create a pocket in each chicken breast by slicing lengthwise without cutting all the way through.
- Stuff each pocket with the mushroom mixture and secure with toothpicks if necessary.
- In the same skillet, heat another tbsp of olive oil and sear the stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before slicing and serve with your favorite sides.
