- 2 cups fresh apple cider
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh sage, chopped
- 4 cloves garlic, minced
- 2 sweet onions, chopped
- Salt, to taste
- Pepper, to taste
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 300°F (150°C).
- Rub the pork roast generously with salt and pepper.
- Add olive oil to a large skillet over medium heat.
- Sear the roast on all sides until golden brown.
- Whisk together apple cider, garlic, onions, and herbs in a bowl.
- Pour the marinade over the seared roast in a roasting pan.
- Pop it into the preheated oven and cook for several hours.
- Sprinkle brown sugar on top during the last hour of cooking.
- Baste periodically with liquid to keep meat moist.
- Check until internal temperature reaches 145°F (63°C).
- Let it rest for 20 minutes before slicing.

Ensure to let the roast rest before slicing for juicier results. Avoid cooking at high temperatures to prevent drying out the meat.
