  • 2 cups high-quality apple cider
  • 2 sweet and tart apples (e.g., Granny Smith and Honeycrisp)
  • 1 large sweet onion
  • 3 cloves fresh garlic
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 cup chicken broth
  • 1 teaspoon cinnamon
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the pork roast dry with paper towels and season generously with salt and pepper.
  3. Heat a couple of tablespoons of olive oil in a large skillet over medium-high heat.
  4. Sear the pork on all sides until golden brown.
  5. Remove the pork and set it aside, adding sliced onions to the pot.
  6. Sauté the onions until soft and translucent, then add minced garlic.
  7. Pour in the apple cider and chicken broth, scraping up brown bits from the pot.
  8. Add halved apples, rosemary, thyme, and cinnamon, stirring to combine.
  9. Return the pork to the pot, covering tightly with a lid or foil.
  10. Roast for about 180 minutes until the pork is tender and shreds easily with a fork.
  11. Remove the roast and let it rest before slicing and serving with reduced sauce.

Notes

For a slow cooker, sear the pork and cook on low for 6-8 hours. Allow for a resting period to ensure juiciness.
