- 1 bone-in pork shoulder or butt
- 2 cups high-quality apple cider
- 2 sweet and tart apples (e.g., Granny Smith and Honeycrisp)
- 1 large sweet onion
- 3 cloves fresh garlic
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 cup chicken broth
- 1 teaspoon cinnamon
- 1 teaspoon black pepper
- Salt to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 325°F (165°C).
- Pat the pork roast dry with paper towels and season generously with salt and pepper.
- Heat a couple of tablespoons of olive oil in a large skillet over medium-high heat.
- Sear the pork on all sides until golden brown.
- Remove the pork and set it aside, adding sliced onions to the pot.
- Sauté the onions until soft and translucent, then add minced garlic.
- Pour in the apple cider and chicken broth, scraping up brown bits from the pot.
- Add halved apples, rosemary, thyme, and cinnamon, stirring to combine.
- Return the pork to the pot, covering tightly with a lid or foil.
- Roast for about 180 minutes until the pork is tender and shreds easily with a fork.
- Remove the roast and let it rest before slicing and serving with reduced sauce.
Notes
For a slow cooker, sear the pork and cook on low for 6-8 hours. Allow for a resting period to ensure juiciness.
