Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1 cup sundried tomatoes, chopped
  • 2 cups fresh spinach
  • 8 oz cream cheese (or mozzarella/goat cheese)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil, oregano, thyme)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  3. Add spinach and cook until wilted, about 2-3 minutes, then remove from heat.
  4. Mix sautéed spinach with sundried tomatoes and cream cheese in a bowl. Season with salt, pepper, and herbs.
  5. Slice a pocket into each chicken breast and stuff with the filling, securing with toothpicks if needed.
  6. Sear chicken breasts in the skillet for 3-4 minutes on each side until golden brown.
  7. Transfer to a baking dish, cover with foil, and bake for 25-30 minutes until cooked through (165°F/75°C).
  8. Rest cooked chicken for a few minutes before slicing and serving.

Notes

For added flavor, finish with a sprinkle of Parmesan cheese before the last few minutes in the oven.
