Description

A nostalgic and heartwarming cake that combines the tartness of apples with a sweet, buttery sponge, perfect for enjoying with family.

Ingredients

Scale
  • 4 Granny Smith or Honeycrisp apples, peeled, cored, and sliced
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. Peel, core, and slice your apples thinly. Toss them in a bowl with a tablespoon of sugar and a sprinkle of cinnamon.
  3. Cream together the softened butter and sugar until light and fluffy, then incorporate the eggs one at a time.
  4. In a separate bowl, whisk together the flour, baking powder, and remaining cinnamon.
  5. Gradually fold the dry mixture into the butter mixture until just combined.
  6. Gently fold in the sliced apples to evenly distribute them.
  7. Transfer the batter to the prepared pan and spread it evenly. Optionally sprinkle some extra cinnamon and sugar on top.
  8. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  9. Let cool in the pan for about 10 minutes before serving.

Notes

Make sure to use firm apples, and avoid overmixing the batter for best results. Can be served warm with powdered sugar, whipped cream, or vanilla ice cream.
