Ingredients

  • 1 cup unsalted butter, cold
  • 1/4 cup sugar
  • 1 cup almond flour
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup sliced or chopped almonds

Instructions

  1. In a large bowl, mix the flour and butter until it resembles coarse crumbs. Use your hands to work the butter into the flour.
  2. Stir in the sugar, then add the egg. Mix until a cohesive dough forms.
  3. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  4. In a skillet over medium heat, toast the chopped almonds until lightly golden.
  5. In a bowl, combine almond flour, sugar, vanilla extract, and the toasted almonds.
  6. Roll out the chilled dough on a floured surface until about 1/8 inch thick. Cut into circles.
  7. Place a spoonful of the almond mixture in the center of each circle. Fold over and crimp the edges to seal.
  8. Preheat the oven to 350°F (175°C) and bake until golden brown—around 20 minutes.
  9. Let them cool slightly before dusting with powdered sugar for serving.

Notes

Chilling the dough is essential for flaky layers. Use coconut oil as a substitute for butter for a dairy-free option.
