- 2 cups all-purpose flour
- 1 cup unsalted butter, cold
- 1/4 cup sugar
- 1 cup almond flour
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup sliced or chopped almonds
Instructions
- In a large bowl, mix the flour and butter until it resembles coarse crumbs. Use your hands to work the butter into the flour.
- Stir in the sugar, then add the egg. Mix until a cohesive dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- In a skillet over medium heat, toast the chopped almonds until lightly golden.
- In a bowl, combine almond flour, sugar, vanilla extract, and the toasted almonds.
- Roll out the chilled dough on a floured surface until about 1/8 inch thick. Cut into circles.
- Place a spoonful of the almond mixture in the center of each circle. Fold over and crimp the edges to seal.
- Preheat the oven to 350°F (175°C) and bake until golden brown—around 20 minutes.
- Let them cool slightly before dusting with powdered sugar for serving.
Notes
Chilling the dough is essential for flaky layers. Use coconut oil as a substitute for butter for a dairy-free option.
