Ingredients

  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, chilled and cubed
  • 1 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • Pinch of Salt
  • 2 Large Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 cup Heavy Cream
  • Optional: Chopped pecans or walnuts, chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, 1/4 cup granulated sugar, and chilled butter. Mix until it resembles coarse crumbs.
  3. Press the mixture into mini muffin tin bases and chill for 15 minutes.
  4. In another bowl, whisk together brown sugar, 1/4 cup granulated sugar, and a pinch of salt. Add eggs, vanilla, and heavy cream. Mix until smooth.
  5. Pre-bake tart shells for about 10 minutes.
  6. Pour filling into each shell, filling them about three-quarters full.
  7. Bake for 15-20 minutes until filling is set but slightly jiggly.
  8. Cool in the tin for 10 minutes before transferring to a wire rack.
  9. Serve warm or at room temperature, optionally with a sprinkle of sea salt.

Notes

Chill the dough for best texture. Ensure not to overbake the tarts for a soft filling.
