Ingredients

- 250g halloumi, sliced
- 4 flour or corn tortillas
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 cucumber, sliced
- 1 avocado, sliced
- 100g sweet chili sauce
- 100g baby spinach or mixed greens
- Fresh cilantro or basil (optional)
Instructions
- Cut halloumi into 1/2 inch thick slices.
- Heat a skillet over medium heat with olive oil. Sauté halloumi for 2-3 minutes on each side until golden brown.
- Slice the bell peppers, carrots, cucumbers, and avocado.
- Warm tortillas in another skillet for 30 seconds on each side.
- Assemble wraps by laying tortillas flat, adding greens, sautéed halloumi, veggies, and sweet chili sauce.
- Wrap tightly and optionally toast them in the skillet for an additional minute.
