Ingredients

  • 250g halloumi, sliced
  • 4 flour or corn tortillas
  • 1 bell pepper, sliced
  • 1 carrot, sliced
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 100g sweet chili sauce
  • 100g baby spinach or mixed greens
  • Fresh cilantro or basil (optional)

Instructions

  1. Cut halloumi into 1/2 inch thick slices.
  2. Heat a skillet over medium heat with olive oil. Sauté halloumi for 2-3 minutes on each side until golden brown.
  3. Slice the bell peppers, carrots, cucumbers, and avocado.
  4. Warm tortillas in another skillet for 30 seconds on each side.
  5. Assemble wraps by laying tortillas flat, adding greens, sautéed halloumi, veggies, and sweet chili sauce.
  6. Wrap tightly and optionally toast them in the skillet for an additional minute.
