Ingredients

  • 3 medium sweet potatoes, peeled and thinly sliced
  • 2 cups fresh cranberries
  • 1 cup heavy cream
  • 4 tablespoons butter, melted
  • 1 cup sharp cheddar cheese, shredded
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon fresh thyme, chopped
  • Optional: 1/4 teaspoon nutmeg or cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your baking dish with butter or oil.
  2. Peeled the sweet potatoes and slice them thinly, about 1/8 inch thick.
  3. Rinse the cranberries well and mix with a little sugar or orange juice if desired.
  4. Layer sweet potatoes and cranberries alternately in the greased dish, starting with sweet potatoes.
  5. Sprinkle salt, pepper, and chopped herbs between each layer.
  6. Whisk together cream, melted butter, and cheese, and pour over the layered ingredients.
  7. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, until bubbling and golden brown.
  8. Allow to sit for about 10 minutes before serving.

Notes

For a lighter option, consider using half-and-half or coconut cream. Allow the gratin to rest before serving to maintain its shape.
