- 3 medium sweet potatoes, peeled and thinly sliced
- 2 cups fresh cranberries
- 1 cup heavy cream
- 4 tablespoons butter, melted
- 1 cup sharp cheddar cheese, shredded
- Salt, to taste
- Pepper, to taste
- 1 tablespoon fresh thyme, chopped
- Optional: 1/4 teaspoon nutmeg or cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and grease your baking dish with butter or oil.
- Peeled the sweet potatoes and slice them thinly, about 1/8 inch thick.
- Rinse the cranberries well and mix with a little sugar or orange juice if desired.
- Layer sweet potatoes and cranberries alternately in the greased dish, starting with sweet potatoes.
- Sprinkle salt, pepper, and chopped herbs between each layer.
- Whisk together cream, melted butter, and cheese, and pour over the layered ingredients.
- Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, until bubbling and golden brown.
- Allow to sit for about 10 minutes before serving.
Notes
For a lighter option, consider using half-and-half or coconut cream. Allow the gratin to rest before serving to maintain its shape.
