- 2 medium sweet potatoes, peeled and cubed
- 1 cup gluten-free flour blend
- 2 large eggs (or flaxseed meal with water for vegan)
- 1 cup milk (dairy or non-dairy)
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp maple syrup (or honey)
- Oil or butter for cooking
Instructions
- Prepare the sweet potatoes by boiling until fork-tender, then mash until smooth.
- Mix dry ingredients (flour, baking powder, spices) in a bowl.
- In another bowl, combine the mashed sweet potatoes, milk, eggs, and sweetener.
- Gradually fold the dry ingredients into the wet until just combined.
- Preheat a skillet over medium heat and add oil or butter.
- Pour 1/4 cup of batter onto the skillet and cook until bubbles form. Flip and cook until golden-brown.
- Serve warm with syrup and desired toppings.
