Description

Ingredients

  • 1 large sweet potato, peeled and boiled
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • A dash of cinnamon or nutmeg (optional)
  • 1 egg (or flax egg for vegan)
  • ½ cup milk (dairy or non-dairy)
  • 1 tablespoon melted butter (or oil)
  • Sugar (optional, to taste)

Instructions

  1. Peel and boil the sweet potato until tender, then mash it in a large bowl.
  2. In a separate bowl, whisk together the flour, baking powder, salt, and spices.
  3. Add the egg, milk, and melted butter to the mashed sweet potato and mix well.
  4. Gradually combine the dry ingredients with the wet ingredients, mixing until just combined.
  5. Preheat a skillet over medium heat and lightly oil it. Pour ¼ cup of batter for each pancake.
  6. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about 2 minutes more.
  7. Serve warm with butter, syrup, or your favorite toppings.

Notes

For best results, do not overmix the batter and cook at medium heat for even results.
