- 1 large sweet potato, peeled and boiled
- 1 cup all-purpose flour (or whole wheat flour)
- 1 teaspoon baking powder
- ½ teaspoon salt
- A dash of cinnamon or nutmeg (optional)
- 1 egg (or flax egg for vegan)
- ½ cup milk (dairy or non-dairy)
- 1 tablespoon melted butter (or oil)
- Sugar (optional, to taste)
Instructions
- Peel and boil the sweet potato until tender, then mash it in a large bowl.
- In a separate bowl, whisk together the flour, baking powder, salt, and spices.
- Add the egg, milk, and melted butter to the mashed sweet potato and mix well.
- Gradually combine the dry ingredients with the wet ingredients, mixing until just combined.
- Preheat a skillet over medium heat and lightly oil it. Pour ¼ cup of batter for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about 2 minutes more.
- Serve warm with butter, syrup, or your favorite toppings.
Notes
For best results, do not overmix the batter and cook at medium heat for even results.
