- 2 cups mashed sweet potatoes
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- Pinch of salt
Instructions
- Preheat oven to 350°F. Pierce sweet potatoes with a fork and roast for about 45 minutes until tender. Cool, scoop out flesh, and mash until smooth.
- In a bowl, combine flour, butter, granulated sugar, and salt. Mix until crumbly, then press into a greased baking dish. Bake for 15 minutes until light golden.
- In a large bowl, whisk together mashed sweet potato, brown sugar, eggs, vanilla extract, cinnamon, and nutmeg until smooth. Pour filling over pre-baked crust.
- Bake again for 25-30 minutes, until filling is set. Allow to cool before slicing into squares.
- Dust with powdered sugar or serve with whipped cream. Enjoy!
