  • ¼ teaspoon nutmeg
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F. Pierce sweet potatoes with a fork and roast for about 45 minutes until tender. Cool, scoop out flesh, and mash until smooth.
  2. In a bowl, combine flour, butter, granulated sugar, and salt. Mix until crumbly, then press into a greased baking dish. Bake for 15 minutes until light golden.
  3. In a large bowl, whisk together mashed sweet potato, brown sugar, eggs, vanilla extract, cinnamon, and nutmeg until smooth. Pour filling over pre-baked crust.
  4. Bake again for 25-30 minutes, until filling is set. Allow to cool before slicing into squares.
