Ingredients

- 2 medium sweet potatoes
- 1 cup cranberries (fresh or dried)
- 1/2 cup goat cheese
- 1/4 cup chopped fresh herbs (parsley, cilantro, or chives)
- 1/2 cup chopped pecans or walnuts
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Salt, to taste
- Pinch of cinnamon
Instructions
- Preheat the oven to 400°F (205°C).
- Peel and chop the sweet potatoes into bite-sized cubes. Toss with olive oil, salt, and cinnamon, and roast for 25-30 minutes until tender.
- While potatoes cool, prepare the cranberries and chop the herbs. If using dried cranberries, rehydrate them in warm water for 10 minutes.
- In a large bowl, combine the roasted sweet potatoes, cranberries, goat cheese, and nuts/seeds. Drizzle with olive oil and apple cider vinegar, then toss gently.
- Adjust seasoning to taste, adding more vinegar, salt, or honey if desired.
- Serve warm, at room temperature, or cold as a side or light main dish.
Notes
For a twist, substitute sweet potatoes with butternut squash or quinoa. Dried cranberries can be replaced with raisins or chopped apples.
