Delightful swirled lemon cheesecake bars with a buttery graham cracker crust, perfect for any occasion.

- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup freshly squeezed lemon juice
- Zest of 2 lemons
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 325°F (160°C) and line a 9×9-inch baking dish with parchment paper and lightly grease it.
- In a medium bowl, mix together the graham cracker crumbs and melted butter until combined, then press into the bottom of the baking dish.
- In a large bowl, beat the cream cheese until smooth, gradually add sugar, add eggs one at a time, and mix in lemon juice and zest.
- Set aside about one cup of the filling for the lemon swirl mixture.
- To the remaining filling, add more lemon juice and zest.
- Pour the lemon-flavored filling over the crust and dollop the reserved filling on top. Swirl with a knife.
- Bake for 30-35 minutes until the center is set but slightly jiggly.
- Cool at room temperature and refrigerate for at least 4 hours before slicing.
- Serve chilled, optionally garnished with lemon slices or powdered sugar.
Notes
Let cream cheese and eggs come to room temperature for a smoother batter. Don’t overmix after adding eggs to avoid cracks.
