Description

Delightful swirled lemon cheesecake bars with a buttery graham cracker crust, perfect for any occasion.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 325°F (160°C) and line a 9×9-inch baking dish with parchment paper and lightly grease it.
  2. In a medium bowl, mix together the graham cracker crumbs and melted butter until combined, then press into the bottom of the baking dish.
  3. In a large bowl, beat the cream cheese until smooth, gradually add sugar, add eggs one at a time, and mix in lemon juice and zest.
  4. Set aside about one cup of the filling for the lemon swirl mixture.
  5. To the remaining filling, add more lemon juice and zest.
  6. Pour the lemon-flavored filling over the crust and dollop the reserved filling on top. Swirl with a knife.
  7. Bake for 30-35 minutes until the center is set but slightly jiggly.
  8. Cool at room temperature and refrigerate for at least 4 hours before slicing.
  9. Serve chilled, optionally garnished with lemon slices or powdered sugar.

Notes

Let cream cheese and eggs come to room temperature for a smoother batter. Don’t overmix after adding eggs to avoid cracks.
