- 1 cup bell peppers, chopped
- 1 onion, chopped
- 1 cup cheddar cheese, shredded

Instructions
- Prepare the Potatoes: Wash and peel potatoes, then cut into wedges or cubes. Soak in cold water for 30 minutes if a crisp texture is desired.
- Sauté the Veggies: Heat olive oil in a skillet, add onions and bell peppers, and sauté until soft (about 5 minutes).
