Ingredients

- 1 lb ground beef or turkey
- 1 diced onion
- 3 cloves minced garlic
- 1 can diced tomatoes in juice
- 1 can black beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 cup sweet corn
- 2 tablespoons taco seasoning
- 4 cups chicken or vegetable broth
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and stir for about a minute until fragrant.
- Add the ground beef (or your chosen protein) and cook until browned, about 8 minutes.
- Drain any excess fat, then stir in the canned tomatoes, beans, corn, and taco seasoning.
- Pour in the broth and bring to a gentle boil. Lower the heat and let it simmer for 15 minutes.
- Taste and adjust seasoning, adding salt and lime juice as needed.
- Serve hot, garnished with toppings of your choice.
