Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 diced onion
  • 3 cloves minced garlic
  • 1 can diced tomatoes in juice
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 1 cup sweet corn
  • 2 tablespoons taco seasoning
  • 4 cups chicken or vegetable broth

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and stir for about a minute until fragrant.
  3. Add the ground beef (or your chosen protein) and cook until browned, about 8 minutes.
  4. Drain any excess fat, then stir in the canned tomatoes, beans, corn, and taco seasoning.
  5. Pour in the broth and bring to a gentle boil. Lower the heat and let it simmer for 15 minutes.
  6. Taste and adjust seasoning, adding salt and lime juice as needed.
  7. Serve hot, garnished with toppings of your choice.
