- 1 cup cornmeal
- 1 can black beans (or pinto beans)
- 1 cup corn (fresh, frozen, or canned)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1 egg
- 1/4 cup melted butter
- 1 tbsp baking powder
- Salt to taste
- Fresh herbs for garnish (cilantro or green onions)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, brown the ground meat and add spices as it cooks.
- Stir in the beans and corn until combined, then remove from heat.
- In a mixing bowl, combine cornmeal, baking powder, and salt. In another bowl, whisk milk, egg, and melted butter, then gradually mix into the dry ingredients.
- Layer the meat mixture at the bottom of a greased baking dish, and spread the cornbread mixture over the top gently.
- Bake for about 25-30 minutes, or until the cornbread topping is golden and set.
- Remove the casserole halfway through and sprinkle with cheese, then return to the oven until melted and bubbly.
- Let it rest for a few minutes before garnishing with fresh herbs and serving with desired toppings.
