Ingredients

  • 1 cup cornmeal
  • 1 can black beans (or pinto beans)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 egg
  • 1/4 cup melted butter
  • 1 tbsp baking powder
  • Salt to taste
  • Fresh herbs for garnish (cilantro or green onions)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, brown the ground meat and add spices as it cooks.
  3. Stir in the beans and corn until combined, then remove from heat.
  4. In a mixing bowl, combine cornmeal, baking powder, and salt. In another bowl, whisk milk, egg, and melted butter, then gradually mix into the dry ingredients.
  5. Layer the meat mixture at the bottom of a greased baking dish, and spread the cornbread mixture over the top gently.
  6. Bake for about 25-30 minutes, or until the cornbread topping is golden and set.
  7. Remove the casserole halfway through and sprinkle with cheese, then return to the oven until melted and bubbly.
  8. Let it rest for a few minutes before garnishing with fresh herbs and serving with desired toppings.
