Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 1 cup fresh Thai basil leaves
  • 3 tbsp soy sauce (mix of regular and dark)
  • 2 tbsp oyster sauce
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 12 chili peppers, sliced (adjust to taste)
  • 1 tbsp cornstarch
  • 1 tbsp oil for cooking

Instructions

  1. Marinate the chicken in soy sauces and cornstarch for 15 minutes.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add minced garlic and ginger, sauté until fragrant.
  4. Add marinated chicken, cooking until browned and cooked through (5-7 minutes).
  5. Add sliced peppers and onion, sauté for 3-4 minutes until tender yet crisp.
  6. Stir in oyster sauce and chopped Thai basil, mix well to coat.
  7. Cook for an additional minute, adjust seasoning as needed.
  8. Serve hot over jasmine rice.

Notes

For a vegetarian option, substitute chicken with firm tofu. Adjust the spice level by using more or fewer chili peppers.
