- 1 lb ground meat (pork, beef, turkey, or chicken)
- 1 cup coconut milk
- 2–3 tablespoons Thai red curry paste
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1–2 teaspoons chili pepper (fresh or paste)
- 1/2 cup breadcrumbs
Instructions
- In a large bowl, combine ground meat with breadcrumbs, minced garlic, grated ginger, and red curry paste. Mix until well-blended.
- Shape the mixture into golf ball-sized meatballs.
- In a large skillet over medium-high heat, add a touch of oil. Brown the meatballs on all sides for about 7-10 minutes.
- Once browned, slowly pour in the coconut milk and bring to a gentle simmer, allowing the meatballs to finish cooking.
- Stir in lime juice and fresh herbs, adjusting seasoning if needed.
- Serve hot over rice or with vegetables, garnished with more fresh herbs.
Notes
For a vegetarian option, substitute ground meat with firm tofu or lentils. You can also freeze leftovers for up to three months.
